Ingredients

  • Carrot- 1 cup (chopped)
  • Oil- 2 tsp
  • Urad dal- 1 tsp
  • Chana dal- 1 tsp
  • Dried red chilli- 4
  • Garlic cloves- 2
  • Onions- 2 tbsp (finely chopped)
  • Coconut- 3 tbsp (grated)
  • Tamarind- a small piece
  • Salt to taste
  • Oil- 2 tsp
  • Mustard seeds- 1 tsp
  • Curry leaves- a handful

 

STEP-BY-STEP PROCESS

· In a pan, heat oil and add urad dal, chana dal and dried red chilli. Roast everything for 2 minutes.
· When the dal turns golden brown, add garlic cloves and onions.
· Cook for 1 minute.
· It’s time to fill your pan with carrots! Add carrots and sauté until it changes colour and softens a bit.
· Let the mixture cool completely.
· Add grated coconut, tamarind and a pinch of salt.
· Grind everything into a smooth paste.
· Now, in a frying pan, add oil, mustard seeds and curry leaves. Let it crackle up.
· Pour the tempering over the chutney and give it a fine mix.
· Carrot Coconut Chutney is made!
