Ingredients
Parotas: 4 (store-bought or homemade)
Cooked chicken: 1 cup (shredded or finely chopped)
Onion: 1 large (finely chopped)
Tomato: 1 medium (finely chopped)
Green chilies: 2 (finely chopped)
Ginger-garlic paste: 1 tablespoon
Curry leaves: a handful
Turmeric powder: 1/2 teaspoon
Red chili powder: 1 teaspoon (adjust to taste)
Garam masala: 1/2 teaspoon
Cumin seeds: 1/2 teaspoon
Salt: to taste
Oil: 2 tablespoons
Coriander leaves: for garnishing
Lemon wedges: for serving
STEP-BY-STEP PROCESS
1. Start by chopping the Malabar Parotas into small pieces.
2. In a pan, heat ghee, add ginger, onion and green chillies. Let it sauté for about a minute.
3. When the onion starts changing its colour, add turmeric powder, cumin powder, garam masala, Kashmiri chilli powder and black pepper powder. Give it a mix.
4. Time to add tomatoes, carrots and salt. Give it a good mix, cover the pan for 2 minutes and let it cook.
5.Now, add the crumbled Malabar Parotas and stir well till they are covered in spices.
6. Use your metal spatula to smash and break the parotas into pieces, a couple of times into further pieces, until you reach the desired texture.
7. Garnish it with fresh coriander leaves.
8. Easy and Healthy Kothu Parota is ready to serve!
