Jini Dosas is a very unique concept that originated from the Ghatkopar area in Maharashtra. It's the dream dosa for a spicy and a cheese lover, filled with the goodness of a perfect mix of them both. 
These dosas are served just like spring rolls but with a South Indian twist to them. Jini Dosas is one of the most popular street foods from Maharashtra and is now all over the country. A true street food lover would be drooling after reading about these dosas.

Ingredients

1. Bhima's Ready-to-Use Dosa Batter
2. Butter or ghee - as needed
3. Onion - 1 (finely chopped)
4. Capsicum (bell pepper) - 1 (finely chopped)
5. Carrot - 1 (grated)
6. Cabbage - 1/2 cup (shredded)
7. Green chilies - 2 (finely chopped)
8. Ginger-garlic paste - 1 tsp
9. Tomato ketchup - 2-3 tbsp
10. Red chili sauce - 1 tbsp (adjust to taste)
11. Soy sauce - 1 tbsp
12. Salt - to taste
13. Black pepper powder - 1/2 tsp
14. Grated cheese - as desired (optional)

 

STEP-BY-STEP PROCESS

1. Heat a non-stick or cast-iron griddle (tawa) over medium heat.
2. Once the tawa is hot, pour a ladleful of Bhima's Ready-to-Use Dosa Batter onto the center of the tawa.
3. Using the back of the ladle, spread the batter in a circular motion to form a thin dosa.
4. Drizzle some oil or ghee around the edges of the dosa.
5. In a separate pan, heat a little oil or butter. Add finely chopped onions, capsicum, grated carrot, and shredded cabbage.
6. Saute the vegetables for a few minutes until they become slightly tender.
7. Add finely chopped green chilies and ginger-garlic paste to the vegetables. Stir and cook for another minute.
8. Next, add tomato ketchup, red chili sauce, soy sauce, salt, and black pepper powder to the vegetables. Mix everything well and cook for 2-3 minutes on low heat.
9. Now, place a generous amount of the prepared vegetable mixture on one half of the dosa.
10. If desired, sprinkle some grated cheese on top of the vegetables for added taste.
11. Carefully fold the dosa over the filling to cover it and press it gently with the spatula to seal the edges.
Allow the dosa to cook for a minute or until the cheese (if added) melts.
Lift the Jini Dosa from the tawa, cut it into pieces, and serve hot with tomato ketchup or any chutney of your choice.
 

STORAGE AND LEFTOVERS

Any remaining dosa batter can be stored in the refrigerator for 2-3 days. Ensure it is covered properly to prevent any contamination. Before making dosas, bring the batter to room temperature and give it a gentle stir.
