Neer Dosa literally means water dosas in Tulu, they are thin and fluffy which is an amusing combo to find. They are one of the easiest and quickest dosa recipes.
The key to perfect this recipe is to make sure that the batter is of water-like consistency and is not fermented which makes it so different from other types of dosas. Neer Dosas are served best for breakfast and tiffin boxes for your children.

Ingredients

1. Bhima's Ready-to-Use Neer Dosa Batter
2. Water, as needed
3. Salt, to taste
4.  Oil or ghee, for cooking
 
 

STEP-BY-STEP PROCESS

1. Take Bhima's Ready-to-Use Neer Dosa Batter in a large bowl.
2. Add water to the batter gradually while stirring continuously until you achieve a thin, watery consistency. The batter should be watery and free-flowing, similar to buttermilk. Make sure there are no lumps.
3. Add salt to taste and mix well.
4. Cover the bowl and let the batter rest for about 4 hours. This resting time allows the batter to ferment slightly and develop the authentic neer dosa flavor.
5. After the resting period, the batter will have a slight frothy layer on top, indicating that it's ready to use.
6. Heat a non-stick or cast-iron griddle (tawa) over medium heat.
7. Once the tawa is hot, lightly grease it with oil or ghee.
8. Pour a ladleful of the neer dosa batter onto the center of the tawa.
9. Using the back of the ladle, spread the batter quickly in a circular motion to form a thin dosa. Since the batter is watery, it will automatically spread on the tawa.
10. Drizzle some oil or ghee around the edges of the dosa.
11. Cook the dosa on medium heat until the edges start to lift and the surface is cooked and slightly crisp.
12. Neer dosa is typically served soft and not flipped over. Once the dosa is cooked, gently fold it or roll it into desired shapes and serve immediately.
13. Repeat the process with the remaining batter to make more neer dosas.
 

STORAGE AND LEFTOVERS

Any remaining dosa batter can be stored in the refrigerator for 2-3 days. Ensure it is covered properly to prevent any contamination. Before making dosas, bring the batter to room temperature and give it a gentle stir.
